An Adult Wedding
What is the proper way to let your guests know that it is going to be an adult wedding?

Thanks for your question and welcome to the site!
If you have decided not to invite children to your wedding, then you should simply address the invitation to the parents, omitting the little ones.
Should an invited couple note on their response card that they are bringing their uninvited children, it is perfectly acceptable to call them and say, "Due to our limited guest list, we are unable to have children attend. I hope you will be able to make alternative arrangements for them so you can still be with us."
You might have couples that respond in the negative; that they will not be attending your wedding due to the fact that they can't bring the kids with them, so you might want to prepare for that.
Just make sure that you apply the "no kids" rule for everyone so that no bad feelings arise.
