Italian Wedding Cake RecipeIngredients:
Cream Cheese frosting
Instructions: Prepare 3 nine inch round pans with bakers secret spray. Add baking soda in buttermilk in a small bowl. 2. In another bowl, mix flour and baking powder. Cream the softened butter, shortening and sugar until fluffy. (My kitchen Aid mixer is 4 minutes). Add eggs one at a time till just incorporated. Then add the vanilla. Alternately, mix the buttermilk mixture with the flour mixture until it is incorporated. Stir in the coconut. Pour into the pans. Bake 350 degrees in preheated oven for 30 minutes or when toothpick comes clean when inserted in middle. Set aside to cool on rack for 10 minutes. Remove from pan and set to cool additional time on rack. For the Frosting: Mix cream cheese, butter and vanilla. Once incorporated, slowly add the shifted sugar until light and fluffy. Add the cream to make a smooth texture to spread. Stir in walnuts and coconut. Now, if you are going to have your cake made for you, you can still have an Italian wedding cake! First, when you meet with your baker, let him/her know that you would like an Italian wedding cake and make sure that he/she knows what that is. At this point, you should have the final number of guests that will be attending your wedding reception. It is essential that you can give this number to your baker, so that they can recommend how large a cake you should be ordering so that all guests could have at least one serving. Don't forget as well, that the top layer is usually saved by the marrying couple (kept in the freezer) to celebrate a first year anniversary, so don't add it in when figuring how much cake to order. Now that you have the size needed, you can decide if you want a slab cake, Tiered Wedding Cake, an Elegant Wedding Cake or if you want to go casual/whimsical. If you choose to go with a more traditionally styled main wedding cake, you could always order a more fun and casual cake for a groom's cake or to be served at a bridal shower or engagement party.
