The Mexican Wedding Cake is the perfect match for your Mexican themed wedding or if you want to pay tribute to your Mexican heritage at your wedding.
There are many choices to make for your wedding cake. You have to choose whether you would like to have it as a Slab Cake or Tiered Wedding Cake or something in between. You also have to choose if you want to keep your Mexican wedding cake an Elegant Wedding Cake or if you want to go casual/whimsical. But don't forget that even if you decide to go with a more traditional and elegant for your main wedding cake, you could always have a more fun and casual cake for your groom's cake or even at your bridal shower. In order to get your cakes more Mexican themed, you could choose bright colors of blues, terracotta, yellows, greens, pinks, purples, reds, sombreros, chilli peppers, margaritas, cacti, tacos, etc. If you are going to have your cake made by a professional baker, or even a friend, just pass along some ideas to him/her and explain how far you want them to take it. Whether you want to go all out or just very softly incorporate some Mexican elements into your cake, it's your choice. Here are some of the cakes I found on a great site called Cake Central. Examples of a Mexican Wedding Cake:

This cake was made for a bride and groom who love Talavera pottery and tiles from Mexico. It was a three tiered, lime coconut flavored wedding cake with a different Talavera design on each tier. In lieu of a topper, two Talavera style swallows circling together on the top. Tiers are 12", 9" and 6".
 This is a coconut flavored cake with lemon curd filling and coconut flavored buttercream. The outside of the cake is covered in toasted coconut flakes, it was delicious! The tiny people on the top of the cake were a decoration for Dia de los Muertos, the Mexican day of the dead. They are a skeleton bride and groom.

This is a beautiful cake, although it was made for a Mexican baby shower, take the baby bassinet off the top and you have a gorgeous cake.

I love the use of brightly colored hearts and icing ribbon on this wedding cake!

A very cute cake! Gumpaste Sombrero and chili peppers. Plastic glasses half filled with green piping gel, luster dust on rims to resemble salt.

This cake is just too cute! It is made of fondant and crumpled up cake for the meat look. The cheese was done from frozen fondant that was grated and the olives were black licorice drops cut and put a whole in.
